I googled ‘mashed potato pie.’ I wondered if it existed, certainly it must! And it does, of course, in many & varied permutations. However, most of the recipes I found begin with the premise that “it’s a great way to use up those leftover mashed potatoes.” Whoa there. Leftover mashed potatoes? Leftover. Left over. Potatoes. Nope. Does not compute.
